Ox Tail.

Terrible picture. But Ox Tail is pretty cheap.

Why not?

Saw someone somewhere mention how they thought Ox Tail made a good stew.  It does.

  • Take the Ox Tail and braise it.  Or broil it.  In this instance, they did not have a lot of Ox Tail at the store, just a little, so we broiled the Oxtail with some other stewing beef.  Salt, pepper, garlic powder.  But you have to watch it under a broiler.  We  don’t want it to burn.

  •  Potatoes, onions, carrots, celery, mushrooms – cut them in large pieces.  Braise them in a pan with red-wine, olive oil.  Large pieces as we want them to not dissolve while in the pot for several hours.  You could braise the Ox Tail in a pan and then use that pan for the veggies too…. .
  • Dump it all in a crock pot for about 6 hours or so, with some water – beef broth – and diced tomatoes.  Gently toss.  Add in your aromatics – bay, parsley, rosemary.  We gave these herbs a little grind in the pestle, to break them up.

All in and ready to simmer.

It was good.  So good that taking a picture of the finished product was the farthest thing in my mind… .
